Proscuitto and Butternut Squash Pizza - the perfect seasonal pizza for the fall containing all the good stuff! Lightly roasted pumpkin, salty prosciutto, topped with peppery arugula and lots of cheese for good measure!
Happy Pizza Friday! Is that a thing? Well, it is now! I know I don't normally post on Fridays, but my scheduling has been a little out lately, and I'm actually toying with the idea of changing my posting days to Wednesday and Thursday. I find Monday's so stressful and can't seem to smash out the work I need to smash out by Monday evening!
Archie has been keeping us very busy lately too. We got neutered on Wednesday and has been adapting to the 'cone of shame'. Poor little dude! I wish he could understand that it's more his benefit in the long run! He looks so forlorn when you put it on him, it breaks my heart! So I've been busy at home with him the last few days until he gets used to the #conelife.
I've been really busy bringing some awesome new recipes to you (eek guys on a side note, there is a friggin yellow jacket in my house??HALP!), and I'm toying with some recipe videos which I can't wait to show you! My folks are in town next month so I'm hustling to bang out as much content as I can before they get here!
Speaking of home, this recipe for my butternut squash pizza with prosciutto was inspired by one of my favourite pizza places back at home. My parents live about 45 minutes from this gorgeous, hip coastal town and it has a little restaurant called 'Pizza Pizza'. It's the best pizza I've had outside of the US and it's where I got the inspiration for this pizza from!

Prosciutto and Butternut Squash Pizza
This pizza is perfect for fall. I thought I said that about my fall harvest pizza last year, but I think this one trumps the harvest pizza! It all comes down to the crispy, slightly sweet roasted butternut squash, and the oh so crunchy prosciutto. I love simple flavours on my pizza, and while this is a simple recipe, it doesn't skimp out on flavour!
You can easily make your own pizza dough for this recipe, or you can buy one from the store. Keep in mind that the preparation and resting till will increase by an extra hour if you make your own dough.
Aside from that, there are two main steps for this recipe - roasting the pumpkin, and cooking the pizza. For the pumpkin, I used about 5 thin slices from a ¼ of a butternut squash. That was enough to top a 10"/25cm pizza. I used the top part of the squash and sliced thin rounds. Keep the rounds as uniform as possible to ensure an even cooking time. My rounds were around ¾ inch/2cm thick. If they are too thin, they may burn the first and second time around.
Once the butternut squash is roasted, you need to top the base with a smidge of olive oil, and around ½ cup of grated cheddar cheese. On top of that goes the pumpkin and prosciutto. Then you bake, then finally add the arugula and pine nuts and a decent pinch of salt! How easy is that?

Prosciutto and Butternut Squash Pizza
Ingredients
- 5 oz butternut squash cut into round pieces, around 5-6 slices
- 1 tablespoon olive oil divided
- 3.5 oz prosciutto
- ½ cup cheddar cheese grated
- 1 cup arugula
- ¼ cup pine nuts
- ½ teaspoon pepper
- ½ teaspoon salt
- 1 10" pizza base store-bought or homemade
Instructions
- Preheat oven to 400F/200C.
- Toss the butternut squash with ½ tablespoon olive oil and a pinch of salt and pepper.
- Roast 15 minutes, until the butternut squash just starts to crisp up.
- Remove from oven and start to assemble the rest of the pizza.
- Roll out your pizza dough to fit a round or square baking tray.
- Brush the base with the remaining ½ tablespoon of olive oil.
- Sprinkle over the cheddar cheese, covering the entire base.
- Top with the roasted butternut squash and add the prosciutto into the gaps.
- Bake in your oven for 15-20 minutes, or until the base is just crispy and starting to brown.
- Remove from oven, and top with arugula, pine nuts and the salt and pepper. Optional: drizzle with a little bit of balsamic glaze.
