This easy veggie pizza recipe is my go-to recipe for homemade pizza when I'm looking for a vegetarian option. Loaded with veggies such as red pepper, mushroom, roasted sweet potato, and of course topped with cheesy goodness, this pizza is easy to make and a family favourite!
Someone asked me the other day what my favourite food was. I had to think about this for a while, but I think in the end it came back to Italian food, in particular pasta and pizza.
Pizza is definitely my go-to takeaway. I freaking love it! Every Thursday, Adam and I usually have what we like to call 'take out Thursday', and more than 50% of the time, we have pizza from our favourite local spot here in Portland. As much as I love having take out, sometimes I love just making a few homemade pizzas from scratch. There is something really relaxing about making homemade pizzas, with a glass of wine, and music playing!
I usually use my own homemade pizza dough recipe which I love. The crust isn't too thick or thin, but kinda perfect if it's cooked the right way! I love my pizza dough just a little crispy on the outside, but still soft in the middle. I love making all my recipes from scratch where possible because I totally prefer knowing exactly what is going into my food!
If you've ever hosted a pizza party at home, you'll know it's important to cater to vegetarians. But I'll let you in on a little secret, this veggie pizza recipe is so good, you won't even care that it doesn't have meat on it!
The pizza has a flavour combination that will blow your socks off. There is fresh cheese, roasted sweet potato for an extra little crunch, roasted red bell pepper and onion, and then finally some fresh basil for a pop of colour, and some pine nuts for added crunch. The most important part to this recipe though is the final crack of salt at the end to tie it all together. With the sweetness of the sweet potato, red bell pepper and onion, it's important to add a little salt to balance it out.
Cooking Tips for this Homemade Veggie Pizza Recipe
To be honest, if you decide to make your own pizza base, you're looking at a lengthier process, which is why I've added in the option of a store-bought pizza base to the recipe card. The dough needs to rise for at least one hour before it can be rolled out and used.
Aside from that, the rest of the process is very simple.
I love roasting my sweet potato first because it becomes crunchy and caramelized in the oven! This takes around 20-30 minutes, depending on your oven but I promise you, it's worth the wait. Aside from that, nothing else is pre-roasted. The red pepper and red onion naturally caramelize when cooked.
This veggie pizza is so simple, yet so delicious, and if you're looking to host a pizza party, I highly recommend putting a vegetarian pizza on the list!

PS - we realise that there are probably too many mushrooms, capsicum and probably sweet potato listed in the recipe, we factored in that if you're anything like us, you'd probably end up eating half of the ingredients listed!
Easy Veggie Pizza Recipe
Ingredients
- 1 homemade pizza base or 1 store-bought
- ¼ sweet potato diced
- ¼ red onion finely sliced
- 2 mushrooms about 30g, finely sliced
- ¼ red bell pepper/red capsicum about 30g, finely sliced
- 5 basil leaves roughly torn
- 5 bocconcini balls
- ¼ cup grated cheddar cheese
- 2 tablespoon pine nuts
- 1 tablespoon olive oil +1 teaspoon for roasting sweet potato
- ½ teaspoon salt to taste
Instructions
- Preheat oven to 200C/400F
- Toss sweet potato in about 1-2 teaspoons of olive oil and some salt and pepper.
- Roast sweet potato for 20 minutes, or until golden brown
Making the Pizza
- Drizzle about 1 tablespoon of olive oil on the pizza base and spread out evenly.
- Sprinkle with cheddar cheese
- Top evenly with roasted sweet potato, onion, mushroom, red pepper, bocconcini and about half the basil. Add more cheese if desired
- Place pizza in oven and bake 20-30 minutes or until the base is crispy and light and brown.
- Remove pizza from oven, top with remaining basil, pine nuts and season generously with salt.
- Slice and serve!

* cooking time includes time taken to roast sweet potato and time taken for pizza to cook
