Light, fresh, simple and bursting with flavour. Loving this citrus ginger dark & stormy right now!
I'm feeling a little ambitious about this post. I made and photographed it over the weekend when we were having some of the best weather we have had in a long time!
Feeling high spirited, like Spring was finally coming I scheduled this post for this week, only to discover that the weekend weather WAS A LIE and that no, it is not getting warmer, it was just a teaser and it is colder than ever.
Absolutely devo.
But, on a plus side, this will get me very excited!
I feel like I have a lot to talk about in this post, mainly because this post holds a few exciting things, and a few quandaries (I think that's the word I'm looking for?!)
Firstly, I am so excited that this post is my first post using my new lens. I finally invested in a Canon 5omm lens and I frigging love it! I think my photos speak for themselves, they seem to be so much more fresh and clean! So super stoked about that!
So past the excitement, now to the quandaries.
Firstly - I had no idea what to call this recipe. It's not a Moscow Mule, it's not quite a dark & stormy because it is made with spiced rum instead of regular rum. So what is it? In the end, I decided to go with citrus ginger dark & stormy, because that's kind of what is it!
And yes, I served these in Moscow Mule (very untraditional) cups, because they looked pretty and I don't even care.
Apologies to any avid cocktail makers, I know I'm all over the place with this recipe! But I can guarantee, it is delicious and that is coming from someone who has done a lot of samples of this recipe.
And by samples, I mean, I made it once, it was delicious. But had to make it again (and again...and again...) just to make sure it was ok!
Yes, I am terrible.
This cocktail is so fresh, and the citrus just packs a punch to really bring out the flavours of the ginger and the spice in the rum.
My favourite ginger beer to use is Cock'n Bull. It is so gingergy and spicy, yet crazy refreshing.
I've always found that this particular ginger beer pairs well with my favourite Spiced Rum - Sailor Jerry. I'm not a rum drinker, and I find this rum in particular not to be too 'rummy', it's the perfect balance between the spice and rum flavour.
Again, not a cocktail connoisseur - so this probably sounds really stupid, but I'll go with it!
Another couple of things to consider about this recipe are the standard shot sizes, and my lack of direction when it comes to quantities of citrus, ginger beer and mint!
I know that sounds ridiculous, but firstly, I have been having a debate about what is a standard shot size in the US compared to Australia.
So, in Australia, a standard shot size is 30ml, or about 1 oz. In America, I swear they double their shots, and I feel like a standard shot is more like 60ml, or just under around the 1.5oz mark.
So, I made this recipe with a double shot because I was a rebel and it was delicious. However, feel free to add as much or as little as you want. I'm going to assume that you are all responsible adults, capable of telling your drinking limits! I usually just free pour anyway and it seems to work for me!
Also on that note, feel free to add as much or as little citrus as you want. We added two wedges or orange, and a wedge of lime with about 3 mint leaves! Adjust it to your taste buds!
So were we are going with this, is that it is time to start pulling off the covers of the grills, and getting serious about some amazing spring and summer dishes coming, because I dunno about you, but I am SO SICK of Winter.

Citrus Ginger Dark & Stormy
Ingredients
- 3 oz spiced rum about 30ml/1.5 oz per glass
- 12 oz ginger beer 355ml, use good quality
- 4 sliced orange
- 2 slices lemon
- 5 mint leaves roughly torn
- ½ cup ice
Instructions
- Divide ice into two Moscow mules cups (if you wanna be a rebel) or glasses.
- Add a shot of spiced rum to each glass.
- Add a squeeze of fresh lime to each glass
- Top each glass with ginger beer (about half per glass)
- Garnish with lime, orange wedges and mint leaves.

Your photos are GORGEOUS! I'm thirsty just looking at them. Isn't getting a new lens the most exciting thing ever? For a food blogger at least :). And I think all drinks should be served in Moscow mule cups! They're too fun to be reserved just for Moscow mules!
