At it again with the chocolate for breakfast! What can I say? I love chocolate! And I love our chocolate chia pudding recipe!
Can't stop, won't stop....writing articles about food, because I'm on a writing role at the moment! Do you ever get those moments where you are just ridiculously motivated and just keep writing and writing and writing? Well that's me at the moment! I've decided to be a little more organised with Healthy Pears, and start to bank some articles and photos! Plus, why stop them the words just keep flowing! Actually, I'm just really trying to put off making dinner. Adam is away so I have no desire to cook anything! I hate just cooking for myself! It's so boring! I usually have to force myself to eat dinner when Adam's away because he usually comes home from work starving! So I always make sure there is some form of food for him for dinner! *
So as I'm currently on a writing role, I thought it was about time I shared our delicious chocolate chia pudding recipe for you! It's actually very similar to our vanilla chia pudding, but with a few added extras and a few changes. I have tended to stick with our basic vanilla before, but I felt like it was time to give the old recipe a makeover. I made a really pretty Neapolitan chia pudding ages ago and then just decided that the chocolate layer tasted just delicious, and needed to become a chia pudding of its own. So hence the birth of our chocolate chia pudding! And damn are we loving it!
I love breakfast. Out of all the foods I eat, breakfast is definitely my favourite meal. I hate lunch, I like dinner if I a) can be bothered making it, or b) it's absolutely delicious! But the more I cook, the more I'm starting to get bored with my own food! But breakfast is a whole different story. I think about breakfast the night before, sometimes I even dream about breakfast! That's how much I freaking love it! I love having long lazy breakfasts that draw out and that you can really enjoy. But sometimes this is not always the case, which is sad. But it's ok, because I can still enjoy this chocolate chia pudding as a breakfast on the run because you make it the night before! So if you like a bit more of a sleep-in in the mornings, then maybe this is the breakfast for you!

Chocolate Chia Pudding
Ingredients
- ¼ cup chia seeds
- 1 ¼ cup almond milk or other non-dairy option
- 1 tablespoon cocoa sifted
- 2 tablespoon maple syrup*
- natural yoghurt to serve
Instructions
- Combine maple syrup and almond milk in a jug. Stir until well combined.
- Combine chia seeds and cocoa in a large bowl
- Add milk mixture to chia and cocoa.
- Whisk with a fork until well combined.
- Cover and place in fridge overnight.
- In the first 30 minutes, stir with a fork again to make sure it doesn't clump together then place back in fridge overnight.
- Divide pudding into two bowls or containers in the morning and serve with fresh fruit and/or yoghur or coconut whipped cream.
