Ok, so I thought I'd do something new for our blog post today, and share some of our five favourite vegetarian & pescetarian dishes with you! I think I'm also trying to make myself more accountabile for saying that I will make more vegetarian dishes, because I don't think there are enough on HP! I also wanted to show you a glimpse of some old recipes that you may not have seen if you're new to Healthy Pears as well!
Despite the fact that I've only got a handful of vegetarian recipes, we love cooking vegetarian meals! In fact, we eat quite a lot of vegetarian meals, including curries , felafel and burgers! The sad thing is however, I just haven't got around to putting these recipes on the blog! I haven't quite got the hang of making savoury food look pretty, so it has kind of held me back making lunch and dinner dishes. So I'm hoping that by seeing my own lack of vegetarian recipe posts, I will get my but into gear and try to do more, and experiment with my photography!
And a confession...yes even though seafood is technically pescatarian, the seafood risotto recipe is amazing which is why I've included it! Just lay off the bacon to make it meat free, and make sure you use sustainability fished seafood!
Our Five Favourite Vegetarian & Pescetarian Dishes
Indian Lentil Dhal
I am obsessed with this dhal! Since going to India last year, it's been a favourite recipe of mine! The original recipe was given to me by my brother and sister-in-law (who is a vegetarian), and I've adapted it since to make it more authentic. This recipe is rich in flavour, and is packed full of goodness! It is great for a Winter or Summer meal, because even though it's a dhal, it is still is a really light meal! It is also really cheap to make, as it only includes a few staple vegetables, lentils and spices which are really easy to find in the supermarket and won't break your budget! We love it!
Zucchini Sweet Corn Fritters
Another favourite because this recipe is so.easy.to.make! So easy, that I felt the need to put full stops after saying that to emphasise me point!
This was a recent recipe that I dabbled with, that had some very good outcomes! I love the freshness of the zucchini and sweet corn, and was really surprised at how much flavour these fritters retained, despite being pan-fried! These fritters only need 6 key ingredients, and again, these ingredients are cheap and easy to find in the supermarket! So easy to make, and a perfect dinner or lunch snack!
Spicy Lentil Soup
This recipe goes out to our Australian family and friends who are currently struggling through some seriously weird and cold weather back at home (bless them). But the weather has been seriously weird over there, snow near the beach? WTF? Damn you climate change.
Our spicy lentil soup is a winter favourite! Found buried in an old CSIRO well-being book, this soup has been on my favourite soup list for many years! It is so easy to make, requires minimal ingredients, is comforting and again, is really cheap to make! When I think of eating this soup, I envisage curling up in front of the fire, glass of red in hand, reading a really good book, cuddled in a blanket - pretty much my favourite winter past time!
Sweet Potato, Pomegranate, Feta Salad
Ok, so I was kind of scraping at the barrel here including a salad, but hey, if it ain't got meat, it's a vegetarian meal! I wanted to share this salad with you because it's probably one of my favs! We do a few salads down here at Healthy Pears HQ, but this is up there with one of my most loved salads!
This recipe is an Adam original. Made from love a time when Adam decided he was going to make a salad, and decided it would be the BEST DAMN SALAD YOU WOULD TASTE... or if anything, up there with the really good! As I mentioned in the article for this salad, I struggled for many hours trying to decide if this was a winter or summer salad. In the end, I concluded it was an Australian summer salad, when the Californian pomegranates were cheap and abundant in Aussie supermarkets! Fact - pomegranates are a winter fruit. Opinion - pomegranates should be a summer fruit.
Summer Seafood Risotto
Ok. So I kind of cheated with this one. I know technically fish isn't considered part of a vegetarian meal, which is why I decided to rename this blog post 'vegetarian and pescatarian' meals, rather than vegetarian. Annnd, this is only pescatarian/vegetarian if you exclude the bacon! So sorry about that, but I really wanted to reshare it with you! Note to self - we need to make more fish recipes. Note to self - the reason we don't do fish recipes just yet is because fish is hard to photograph and doesn't look pretty. Note to self - practice fish photos.
This was another of Adam's master creations. He frustrates me sometimes. I am a methodic person, who needs to write down the ingredients, have a plan and make and remake dishes until they are perfect! Adam is not. Adam is a, 'find what's in the fridge and make a meal out of it person' or 'she'll be right I don't need a recipe' kind of person. Which really irks me. More so the fact that the times he does his methods, he's usually pretty spot on with the flavours, and occasionally (ok, more than occasionally) get's it right the first time! Which annoys me even more! But it's pretty cool to learn from, and makes me try unusual combinations. I think since cooking together, we have both learnt a lot about flavour pairing and combinations!
