Partied too hard over the weekend? We've got you covered! Tropical fruit smoothie made from creamy coconut milk and summer fruits - OMG
I am loving anything tropical at the moment. I think it's because Portland has been turning on the weather for us the last couple of weeks and it is amazing!!! It has been so hot and beautiful lately!! I've been eating a lot of fresh summer fruits like mangoes, pineapple, strawberries, blueberries and oranges. And I had a bit of leftover coconut milk from a recipe creation I did the other day which I thought would go amazingly in this tropical fruit smoothie. I mean, you can't go tropical without some form of coconut right?
I think I've had my fair share of winters for a while. Adam and I were talking about a honeymoon destination the other day. He loves the snow and wants to go to Japan, I wasn't too convinced, as much as I love the snow, I am definitely more of a beach gal! We haven't had a tropical holidays since Thailand in 2009! And I'm craving tropical waters, coconuts, cocktails by the pool and rainforests.
So all this talk of tropical holidays, paired with the amazing weather has got me so excited for our first FULL Summer since the 2012/2013 Summer! Crazy right! Vitamin D come at me!
This tropical fruit smoothie is creamy, delicious, fruity, a little zesty and ridiculously easy to make. I go through stages where I make both runny and thick smoothies, but I love this tropical fruit smoothie really thick! The coconut milk adds such as rich, creamy flavour to it! Tropical Fruit Smoothie
Ingredients
- ½ cup frozen mango
- 1 orange peeled and quartered
- ¼ cucumber
- 5 mint leaves
- 1 tablespoon chia seeds
- ¼ cup coconut milk
- 1 cup filtered water
- 1 cup spinach
- 1 teaspoon lime juice
- 2 ice cubes
Instructions
- Blend mango, orange, cucumber, spinach, mint, chia, lime, coconut milk, water and ice together in a good quality food processor.
- If you want a creamier or thicker smoothie, add more coconut milk or ice. If you prefer a runnier smoothie, add more filtered water.
- Serve and enjoy
