Creamy mashes cauliflower is a great low carb alternative to mashed potatoes! This recipe combines creamy cauliflower, with honey butter and a touch of rosemary for some holiday flair! This is perfect for a Christmas side dish, or when you're in the mood for something rich and comforting, without the extra calories!
Oh hi friends! Stick with me here! You're probably thinking, 'um, mashed cauliflower, she must be crazy', or either that you're on the 'heck yes, mashed cauliflower' bandwagon, but just stick with me while I explain!
So a few weeks back, Adam and I attempted to start the Keto-diet. As you may be well aware, THCK is not a Keto-friendly blog, so I was really struggling to find recipes that were low-carb and Keto friendly. We basically lived off cauliflower for a week (yep, Keto lasted one whole week!), and I actually found a new love for cauliflower recipes! It also got me thinking, just because I practically eat anything, doesn't mean my friends and family do!! Which is why I thought it would be good to bring you some more diet-varied recipes!
You're always going to come across people who are on a specific diet or have certain food intolerances - whether it be vegetarian, Keto, paleo, or whatnot, so I think it's important to have a repertoire of recipes that meet specific dietary requirements. I always say that one of my number 1 rules of entertaining, is to find if any of your guests have any specific dietary requirements, so you can accommodate accordingly.
So, this is where this creamy mashed cauliflower comes into play!
Technically, with the honey, this isn't keto, but if you are looking for a keto option, you can omit the honey! This is a low-carb dish, that is a great substitute for mash potatoes, and frankly, tastes just as good! The cauliflower mash is super creamy, and the flavor you get from the cauliflower combined with the honey butter is absolutely heavenly! You don't feel like you're missing out on taste at all!
This creamy mashed cauliflower is super easy to make, requiring a few simple ingredients! It's also super quick to whip up, meaning it is a great option for a busy Christmas gathering!

How to Make Uber Creamy Mashed Cauliflower
You'll start with one large head of cauliflower! I break mine up into smaller florets to steam, as it takes less time when the pieces are smaller. I prefer to steam my cauliflower as opposed to boil it, I've always heard that boiling gets rid of more nutrients than steaming, so I'm all for steaming instead.
Once your cauliflower is steamed, you'll melt the butter and honey together in a small saucepan with the rosemary and let the rosemary infuse just a little bit.
Once your butter is melted, transfer the cauliflower to a blender, add the butter and blend until smooth.
You'll need a high powered blender, if you have one. Mine kinda sucks so it took a little longer to blend together! You'll want to blend until the mash is completely smooth, almost to a puree.
To serve, I leave a little of the butter leftover to drizzle over the top, and top with a crack of pepper and some extra rosemary for looks!
This dish is best served hot, however can easily be reheated prior to serving. To reheat, simple place the puree in a small saucepan, heat over low-medium heat stirring, until it's hot.
And that is literally all there is to it! Within about 30 minutes, you've got yourself a comforting, cozy creamy mashed cauliflower dish for the dinner table! And as an extra reassurance, Adam took a few bites the other night, and told me he thought it was 'restaurant quality' good! Day made!! Happy Thursday!

Creamy Mashed Cauliflower
Ingredients
- 1 head of cauliflower large, cut into florets
- 2 tablespoon butter
- 1 tablespoon honey
- ½ tablespoon rosemary finely chopped or sub fresh thyme
- ½ teaspoon salt
- ½ teaspoon pepper
Instructions
- Cut the cauliflower into florets, and place in a steaming basket over a pot of water. Steam for 10 minutes, or until the cauliflower is soft.
- Place butter, honey and rosemary in a small saucepan and heat until butter is melted and honey is runny.
- Add the cauliflower to a high powered food processor with the honey butter, and salt and pepper. Tip - leave about a teaspoon of honey butter for serving (optional)
- Process until the cauliflower is smooth and creamy.
- Transfer to a bowl and serve with a crack of black pepper, a drizzle of honey butter and some extra rosemary.

Oh, I've never had mashed cauliflower but it sounds delicious! We always have a million potato dishes at our family Christmas dinner, so maybe I'll have to bring some mashed cauliflower this year instead!
