Happy almost Valentine's Day! I must admit, I'm not one to celebrate Valentine's Day BUT I am however one to host a kick-ass romantic dinner for two for hubby and me when I'm feeling like spoiling him!
I've always found having the best date night's we've had were when we have cooked for each other at home. There's something so special about taking that extra time and effort to cook your own food from scratch, in the comfort of your own home! Winter, it's a cozy pasta dish, red wine, movie and fire. Summer, it's all about having backyard dinner with a crisp glass of white wine, watching the sunset and listening to some chill tunes.
Making dinner for my husband is one of my favourite things to do, and plays a huge part in our lives, so that's why today I'd thought I'd share that with you!
This romantic dinner for two is epic. It consists of my two favourite things - carbs and chocolate, and for a romantic date, you can't really go wrong!
BUT, not only do I have two beautiful recipes for you, but also a really fun way of jazzing up date night, AND a Spotify playlist to bring your night together!
I am SO excited about today's post and you know what, it's not just for you and your hubby or wifey, you can enjoy this romantic dinner for two with anyone, any day! Celebrate and spread the love!!!
ROMANTIC DINNER FOR TWO
Main Course
For the main course, I've decided to go with a favourite of mine - simple spaghetti all'Amatriciana. This amatriciana is to die for!!! It is not only so, so easy to make, but I've perfected the recipe to make it the perfect amount for two people. It's light, fresh and has so much flavour for such a simple recipe! It is honestly, but favourite pasta of all time and I always save this dish for a special occasion.

Dessert
CHOCOLATE MERINGUEs!!!!!
OMG, but.... OMG. These chocolate meringues are no joke, THE BEST dessert I think I've ever made. I wish I could teleport a sample for you guys because you will absolutely LOVE it!
These chocolate meringue nests are so decadent, without being overly sweet and are just the cutest! Nothing goes better together than crunchy chocolate meringue, whipped cream and fresh berries! These meringues are nice and crisp on the outside and gooey and chocolatey in the middle. I couldn't stop at one!
I gave one to Adam to try, he took one bite and looked at me with a goofy grin on his face - you know that face when you make something you know is amazing!
They are just so gorgeous, and so delicate and personally, I think, really romantic!

Serving Suggestion
For the main course, I'd suggest serving the bucatini all'Amatriciana with a soft red, like an Oregon or Tasmanian Pinot Noir, French red or a crisp white wine like a Marlborough Sauvignon Blanc or Chardonnay. This pasta is perfect for winter or summer and both wines pair really well with the dish.
I'd suggest also serving the pasta with a really nice loaf of crusty warmed bread. Nothing beats mopping up a pasta sauce with bread and in the meantime, adding to your carb overload!
For dessert - fresh cream, fresh berries, a few sprigs of mint and just a dusting of cocoa or grating of chocolate is all this recipe needs needs! The dessert speaks for itself!

Wrap up your date night ideas in an easy DIY jar!
Get some popsicle sticks from your nearest Dollar store, write out your date ideas on the popsicles and place in a Mason jar. When you're ready for a date, pull out a stick and see where you're off to!
But wait! What about some chill vibes to set the mood for the night?
As well as food and wine, (among other things), music is a HUGE passion of mine. Adam and I have so many good memories revolving around music - date nights, road trips, music festivals etc and I really think music makes a huge difference in setting the mood for your night!
So, I thought I'd compile a Spotify playlist together of all my favourite tunes that set the mood for a perfect date night. You'll find a collection of some of my all-time favourite tunes that are positive and upbeat, but chill at the same time!
This playlist is perfect to have to play in the background as you get your conversation rolling! And in general, actually makes a damn good playlist! I've had it on repeat since making it!
